Dr. Ashley Peterson, Senior Vice President of Scientific & Regulatory Affairs at the National Chicken Council, explained that reversing this rule could help address shortages and inflation caused by the avian flu. Before the rule was finalized, the industry sold nearly 400 million eggs annually. The proposal aims to reintroduce these eggs into the market, potentially alleviating supply constraints and reducing prices.
