Bird flu drives up egg prices for Twin Cities businesses

Egg prices are rising in the Twin Cities due to a bird flu outbreak that has caused a shortage, impacting local businesses significantly. Bakeries, in particular, are facing challenges in sourcing eggs, with one Minneapolis bakery considering raising its prices as a result.

Lutunji’s Palate Bakery and CafĂ©, open for nearly three years, has maintained consistent pricing. However, owner Lutunji Abram says the current 28% increase in egg costs is unsustainable. Monthly expenses for organic eggs have risen from $250 to $420, an additional $170 per month. Abram uses 50 to 70 dozen organic eggs monthly for various menu items, but wholesalers sometimes run out of stock. This forces her to buy retail, where prices are higher, adding $4 to $8 more per dozen.

Abram has managed to grow her customer base since opening in 2022 without raising prices, despite inflation affecting her revenue. While new clientele helps, the balance remains precarious. Abram is now contemplating a price hike of 75 cents to $1 to manage rising costs. She plans to assess her financial situation before spring to determine how long she can delay increasing prices. Despite slower sales, Abram remains optimistic about the quality and appeal of her products.
